Our organic raw cacao powder is made from Arriba Nacional cacao beans, one of the world’s most respected and rare fine-flavor cacao varieties. Native to Ecuador, Arriba Nacional is renowned for its naturally complex, elegant flavor profile, prized by chocolatiers and cacao experts alike.
Thanks to minimal, low-temperature processing, our raw cacao powder retains its naturally high nutrient content. The result is a cacao powder with an intense chocolate-flavor, full-bodied taste, free from bitterness, additives, or unnecessary processing.

The beans are cultivated by small holder farmers in the Ecuadorian provinces of Los Ríos, Manabí, Esmeraldas, and Pichincha, -regions with ideal climatic and soil conditions for fine cacao. Farmers involved in cultivation and processing receive fair compensation and ongoing training in organic farming methods, supporting both long-term livelihoods and the preservation of this endangered cacao variety.
The cacao trees grow inbiologically diverse forest systems, alongside hardwood trees and fruit trees such as orange, mango, and avocado. This form of agroforestry not only protects the ecosystem but also contributes to the depth and balance of flavor found in the cacao.

We work exclusively with the finest organic farmers within driving distance of our chocolate atelier in Mallorca. Because we believe real flavor starts at the root — in healthy soil, seasonal harvests, and respectful cultivation.
Fruits, herbs, and nuts are picked at their peak and processed either locally or right here by our master chocolatier himself.
And while coffee doesn’t grow in Europe, we’ve chosen to collaborate with a like-minded organic roastery — a bean-to-cup pioneer that shares our commitment to purity and sustainability.
ABOUT OUR CACAO
Pure Raw Cacao, Preserved by Nature
Most commercially available cacao is roasted at 110°C- 160°C for 30 minutes, a speedy process that depletes the plant of it's health benefits. Unroasted cacao undergoes a very different process in order to preserve its many flavours and natural qualities
We source our cacao from small farms in Peru and Ecuador where it grows in a sustainable environment amongst mango, pepper, vanilla and coconut palm trees. Relying on ancient wisdom, local workers use special techniques to cultivate, harvest and process the cacao.
Cachao follows a carefully controlled production process lasting for 4 days, to ensure the highest quality, while maintaining the temperature of the cacao mass beneath 42°C in order to preserve all the valuable nutrients.
